The Neapolitan Origins

Pizza's origins can be traced back to the ancient Roman city of Naples. According to the Italian website “Taccuini Storici” (which offers a historical approach toward Italian cuisine):

“The pizza has ancient origins, some suggest even in the era of the Etruscans [about 500 BC]. Of course it was something that vaguely had the shape and appearance of the pizza today . . . The word [pizza] was voiced before the year one thousand, as in ‘pizza de pane’, and it was cited by 16th-century authors as a focaccia [a flat oven-baked Italian bread which may be topped with herbs or other ingredients] that accompanied meat and other comestibles, may be seasoned with mostacciuoli . .


The Rise of Neapolitan Pizza

The 18th century marked a significant turning point in the history of pizza. During this time, Neapolitan pizza began to take on its characteristic form, with a thin, chewy crust, a rich tomato sauce, and a generous layer of mozzarella cheese. This combination of flavors and textures proved to be incredibly popular among the working-class people of Naples.

In the 19th and 20th centuries, pizza began to spread beyond the confines of Naples. Italian immigrants brought their beloved dish to various parts of the world, including the United States, Canada, and Australia. As pizza gained popularity in these new countries, it underwent a series of transformations, adapting to local tastes and ingredients.

Today, pizza has evolved into a truly global cuisine, with countless variations available. Some of the most popular styles include:

  • New York-style pizza: Known for its large, thin crust and often topped with a generous amount of cheese and sauce.

  • Chicago-style deep-dish pizza: Featuring a thick, deep crust and a hearty filling of meat, cheese, and vegetables.

  • California-style pizza: Often characterized by its creative toppings, such as fresh seafood, grilled vegetables, and artisanal cheeses.

  • Detroit-style pizza: Baked in a rectangular pan and topped with cheese that forms a crispy, golden-brown crust.

  • St. Louis-style pizza: Made with a thin, cracker-like crust and typically topped with Provel cheese, a processed cheese blend.

  • Indian style pizza: is a fusion of Pizza and Indian flavours & can include a variety of toppings like tandoori chicken, shahi paneer and vegetables. There could be sauces which are also used in some cases like butter chiken sauce, vegan sauce and may be use plant based cheese.
